Ahhh, peanut butter cookies — such a delicious treat. I’ve always loved peanut butter, and my mom used to make some really good peanut butter and chocolate bars when I was a kid. On Thursday night, though, I just had a craving for plain old peanut butter cookies, so after some diligent Googling, I got out my Kitchenaid mixer and came up with this recipe for the perfect soft, yet crunchy peanut butter cookies.
What you’ll need
• 1 cup brown sugar
• 1 1/2 cups Flour
• 1 tsp Salt
• 1 tsp baking soda
• 1/4 cup sugar
•1/2 cup butter (softened)
• 1 Egg
• 1 cup peanut butter
• 1 tbsp agave syrup (or vanilla extract works too)
To start, preheat your oven to 350 degrees. In your mixing bowl, beat softened butter, egg, agave, peanut butters and sugars on medium until combined into an almost frosting-like consistency. Then, add in flour, baking, soda, sugar and salt, beating well until the ingredients become doughy.
At this point, place the dough in half inch balls on your cookie sheets, flattening each with a fork. Bake them 14-15 minutes, or until slightly golden brown, then remove and let cool. This recipe makes 24 cookies, and they pair well with an English Breakfast or Earl Grey tea. Caution: they are very good, I ate a ton of them right away!
